Nutrition

Our registered dietician, Mimi Murray, offers nutritional and wellness seminars for gym credit, athletes, hall advisors, and employees, as well as individual counseling by appointment. Call 526-7417 to discuss healthy eating, weight management, sports nutrition, eating disorders, food allergies, lactose intolerance, or other nutrition concerns. 

Mimi serves as a consultant for menu planning and recipe development, working with the gym and health center to achieve overall student wellness.  In addition, we've developed nutrition information books that contain an analysis of most recipes on our menu.

Lactaid 100 (100% lactose reduced, non-fat milk)
West Soy Plus (calcium fortified soy milk)
Enriched Rice Dream (fortified rice milk)
100% Fruit Juices
Skim (non-fat), 1%, and Whole Milk
Low-Fat Swiss Chees at the Deli Bar
Low-Fat Cottage Cheese
Low-Fat Yogurt
Low-Fat or Non-Fat Frozen Yogurt
3 Low-Fat or Fat-Free Dressings and 3 Regular Dressings on all Salad Bars

Recipe Standards:

We only use 1% milk in our recipes
We only use canola oil for frying
We use canola oil in recipes requiring salad or vegetable oil
All our canned fruits are packed in water or juice

Our tuna is packed in water
We use light mayonaise in all recipes requiring mayonaise
We do not add MSG to any recipe (some purchased items may contain MSG)
We only use soup bases without MSG
Half of our cereals are low in sugar
We use canola or olive oil in most our recipes. Where butter is needed, we use non-dairy margarine
Items containing nuts are clearly labeled
